In this unprocessed form, they are rich in antioxidants, magnesium, healthy fats, and fiber, helping to combat oxidative stress, support heart and digestive health, and naturally enhance mood.

Unlike mass-produced chocolates, which often use heavily processed cocoa with diminished nutritional value and excess sugars, additives, and preservatives, our cacao nibs retain all their natural goodness. It’s an antioxidant-rich source of healthy monounsaturated fats similar to olive oil, contributing to heart and brain health and reducing inflammation. 

In chocolate-making, cacao nibs are ground into a paste and melted into what is called cocoa liquor, which can be separated into cacao solids and cacao butter. It’s at this stage that cacao butter is often extracted and sold for profit to the cosmetics industry, as its properties make it an excellent moisturizing ingredient. 

Many chocolates replace this antioxidant powerhouse with extremely unhealthy hydrogenated vegetable oils and artificial ingredients that attempt to mimic the velvety texture of cacao butter. Unlike other chocolates that replace this natural fat, we preserve it for its heart-healthy benefits and unparalleled creaminess.

Ever thought chocolate could be good for your gut?

Inulin, also known as chicory root fiber, is a natural prebiotic and dietary fiber found in many plants, including chicory roots. It contains a long chain of fructose molecules, the same ones that make fruits and berries sweet—but it is linked in a way that our body can’t digest, so it acts as a dietary fiber. Dietary fiber improves digestion and bowel function, gut- and heart health, and curbs appetite. 

Why do we use it in our chocolates? Inulin is not only a phenomenal soluble fiber that supports digestive health but also acts as a mild natural sweetener that does not elevate blood sugar levels. 

Scientific literature has shown inulin to also help regulate fat metabolism, promote weight loss, control blood sugar, relieve inflammation, improve constipation, and even aid in relieving depression.

Like any fiber consumed in excess, chicory root fiber in large quantities can cause gas and bloating. However, by combining it with other natural sweeteners, the amounts consumed in our chocolates are unlikely to have these side effects.

Most commercial erythritol is produced by fermenting glucose from corn or wheat starch. While it’s metabolically safe, the non-organic practices of corn farming can influence its taste and sometimes lead to gastrointestinal discomfort when consumed in large amounts. It is typically commercially produced through fermentation of glucose from corn or wheat starch.

However, erythritol is not exclusive to corn. Most may not realize that we naturally produce it in our gut, and it's also found in organic fruits like apples, grapes, and pears. Erythritol in Europe, where food production often has higher safety and quality standards, is extracted from organic apples and pears. There is a noticeable difference in taste between corn-based erythritol made in the US compared to the European fruit-based organic erythritol, and the latter version also has less potential for digestive side effects.

5. Whole Plant Stevia

Can a plant be the key to guilt-free chocolate indulgence?

You have likely heard of stevia, however, there are many misconceptions about this natural sweetener. When most people think of stevia, they think of the white powder pouches that you use for your coffee or tea. 

That is not real stevia—more often than not, it’s dextrose, maltodextrin, sucralose, or other chemical non-nutritive sweeteners that wreak havoc on our health and deactivate our immune system. There may be an ingredient on the package labeled “stevia leaf extract,” but this is usually not a natural stevia derivative. It is a laboratory-engineered compound that mimics the taste of the sweet molecule steviol that is found in real Stevia, with undesirable aftertaste and bitterness. 

Real stevia is a green plant, every part of which is sweet—actually 250 times sweeter than sugar. You only need a small amount to mimic the sweetness of sugar. We use whole-plant stevia in our chocolates, which is why you will never experience a strange aftertaste. 

Whole-plant stevia was the original sweetener used by Aztecs and Mayans in their medicinal and ceremonial chocolate drinks, which was what originally inspired us at Sinless Treats Chocolate to use whole-plant stevia as one of our sweeteners. Allulose

What is allulose sweetener?

Allulose is a plant-based sweetener that mirrors the taste and texture of sugar without its adverse effects. It has almost zero calories, zero net carbs, and a glycemic index of zero. Its unique molecular structure means our bodies can't metabolize it, allowing it to pass through without raising blood sugar levels.

Studies have also shown allulose to aid in weight management and even reduce the risk of developing type 2 diabetes. This makes it an ideal sugar alternative for people monitoring their sugar intake, such as individuals with diabetes, obesity, or those following a ketogenic diet or simply aiming for a healthier lifestyle.

Allulose is found in small amounts in fruits like grapes, figs, and corn, and is considered rare and expensive. While we don’t use allulose as part of our core blend of sweeteners for our chocolate, its ability to caramelize like traditional sugar—unlike stevia and erythritol—makes it ideal for creating sugar-free caramels and fruit fillings for our bonbon flavors. 

Like other sugar substitutes, allulose can cause some gastrointestinal side effects when consumed in large amounts, although sensitivity and symptoms vary. However, mixing allulose with other sugar alternatives as we do has been found to mitigate the risk of those side effects.
